I don't eat meat anymore, but when I did I loved anchovy skin rolls at a Kaiten or conveyor sushi place, mostly because they were the cheapest plate. I think it was just skin, rice and cucumber. I think salmon skin has become the norm but I'll bet if you follow that recipe it'd be pretty good
By cucumber I think I meant avocado. To me I couldn't tell much difference between Unagi and Anchovy, especially after it was cooked. It's just a lot cheaper.
