The short story: One of the houses that he forged the deed for and stole wound up back in the hands of the rightful legal owner who then sold the property to a relative. This is known because you can look up the deed history in California's public records where Nick stole the house with the forged deed, then a few months later, it was given to another party (the rightful heir) with no money exchanged. The actual photocopies of his forged signatures on the stolen deeds are now no longer available in the public records system, only the records of the transactions, which generally means that the deeds have been "pulled" so they can be included in some form of ongoing case. It would seem that at this point, Nick being arrested or charged with something somewhere is inevitable at this point, though the prevailing theory is that he keeps moving around in his RV to make himself more difficult to find.
