There are pubs in Spain (I'm thinking of one in Sevilla) where the old carvers put their old used up jamon carving knives up on the wall once they have been used up. Their knives have cut through so much jamon that they wear down to just nubs and they need new knives.

I've always wanted to buy one to have around Christmas. Any suggestions on where to buy one that won't break the bank?
