I'm dubious as to the reality of this. I haven't seen any evidence that the iPhone's motion sensor is capable of detecting rotation, just orientation. One of the common theories about it is that the camera motions are just baked in and he's moving the iPhone in sync with them.
Ah, in fact, he's come clean about it: http://www.davidoreilly.com/blog/

"The iHologram app was not real. It was an illustration of an idea I had which I believe could work with the technology (combining anamorphosis and motion sensing). Unfortunately Iím just an ideas person, and I can show how things should look, but Iím no hardcore programmer.

"Iíd be happy to collaborate with a developer or studio who wantís to make it happen, Iím bursting with ideas for the interactive world, but right now all my attention is on filmmaking.

"My aim with this was to tackle the problem of 3d viewing in an original way using current technology, not fool anyoneÖ so for those who doubted but still supported it, respect. I hope it inspires some talented programmers out there."

What a sneaky bastard.

holy shit read the comments here: http://www.cartoonbrew.com/cgi/awesome-animated-3d-illusion-on-iph one

MachDice does something similar (though obviously not rotation-based). The effect works better if you keep one eye closed.

I was just about to say how, apart from dead reckoning, there'd be no way for a device flat on a table to know which direction it was pointing. I'm glad I didn't say that, since compasses exist.
