The sadness you can see in the dog's eyes is from the knowledge that if he doesn't sit there in front of the crab for a couple minutes, the owner is going to chase him around the apartment for half an hour saying "it's a crab!" and "you can only look!" while shoving the crab into his face.

I think that's pretty much it. The dog wants to eat it but is at least smart enough to understand that he can't just scarf it down.
