Incidentally, "almond milk" has been used for so long that all existing medieval cookbooks have a recipe for it. "laict damandes" appears frequently in Le Viandier (ca. 1300).
"soy milk", on the other hand, is a rarity before the last century.
Milk should only be used if it comes from a cow. Except when it's not, like in the case of coconut milk, which is sometimes referred to in recipes as coconut cum.
