I had a lot of this stuff when I was a kid, now I am itching to try it again.
Don't think I ever had tripe though, it's probably the easiest one to get a hold of here.

He's right that some people seem to think that viewing your food as a living animal will make you nauseous, but if you actually help butcher sometime it's more likely to make you think of living animals as food.
I like crispy skin better than organ meat though, organ meat is pretty rich.
