This would be my only reason to get the game. I'd just walk or drive around the game world looking at all the scenery and people.
GTA missions have always been a pain in the ass and the mindless mayhem hasn't been enjoyable since they introduced more realistic NPC behavior.
Randomly firing a rocket launcher into a crowd was much more fun when the wounded survivors didn't stagger from the aftermath screaming for help and holding their guts in.

It made me picture a chicken in the GTA universe going all crazy-go-nuts.
I didn't play IV, but I've play the others, and this was the first GTA that didn't have any truly awful, frustrating missions. I actually thought that the overwhelming majority of them were very fun.
I actually don't recall the kind of "wounded survivor" you describe in V, at least on the PS3 version.
Yeah, the NPCs are a bit weak in GTA V. More often than not, they will die instantly if you punch them even once.
I punch everyone and I've never killed anyone with one strike.

The latest incarnation of SimCity looked very nice, too.
I would hope that more games started worrying about actual game mechanics apart from shootin' stuff and wringing more polygons out of the hardware, but I'm not holding my breath.
GTA V is a known commodity. The game itself has been out for over a year. It's a great game. This is just an extra level of polish on it. This isn't like SimCity at all.

I have to fucking get the new version of this. I really have wanted a first person mode and this combined with the camera and the fact I know have a decent recorder for gameplay I kinda want to do something interesting with this.
GTAV was a much better game, mechanically, than 4. The combat felt much more natural and fluid and less like controlling a human-shaped tank. So I can't see it making the game too much easier, but it would unquestionably help with the driving and flying parts.
You should remake the Smack My Bitch Up video in GTA V.

its the nervous leg tick at :30 that gets to me. the first person view has really changed the game, its really something else

GTA 3/San Andreas/4 > GTA 5.
I'll agree with you on GTA 3 and SA, but 4 was worse than 5.
